Ginger Soup Recipe

Carrots are known by herbalists to prevent infection and ginger has anti-inflammatory, analgesic, antioxidant, and anti-emetic properties. When including these two mystic rootstocks with other veggies in soup form to your diet, will make your life more splendid.

Ingredients

  • 1 tbsp olive oil
  • 2 cups onions (chopped)
  • 3-4 cloves garlic (minced)
  • 4 cups fresh carrots (chopped or diced)
  • 2 teaspoons ginger (freshly grated)
  • 4 cups vegetable stock
  • 1/4 cup orange juice
  • 3 cups rice milk
  • Salt to taste
  • Pepper to taste
  • Roasted Peanuts (for garnishing)
  • Coriander Leaf (for garnishing)

How to make Carrot Ginger Soup

Take a pan and add olive oil in it to saute onions and garlic. When onions becomes translucent or pink in color, add carrots, ginger & vegetable stock in this pan and give a nice boil to all the veggies until carrot gets tender or soft. Now, off the flame and keep this pan aside to get all the veggies cool down. After sometime, pour all the veggies in blender and make a good puree. Again, turn on the flame and heat this puree. Now, slowly add rice milk & orange juice to this puree but do not let it boil. Keep the flame low. Then add salt & pepper as per taste and before serving garnish it with some roasted peanuts & freshly chopped coriander leaf.

Yummy Secrets:-

1)Just add finely chopped stems of coriander leaf during onion saute. It will give relishing flavour to the soup.
